The Ultimate Secret To Steamed Momos AKA Dumplings

I have personally never met an Indian who doesn’t loves Momos or also know as Dumplings. Whether its vegetarian or non-vegetarian, it’s steamed or fried (Check out my Fried Momos Recipe: Click here), people all over India enjoy Momos with spicy red chilly schezwan chutney or mayonnaise. But today I tried some other chutney, yes and I am sharing this with you Over Here in this Blog.

I have just heard that Delhi ke Momos are the bestest ever, so I watched several means alot of videos and traced that perfect recipe for Me and You all. Those Dumplings or Momos are quite light, they melt right away in your mouth and the key ingredient here is BUTTER. Yes, you heard it right, it’s butter and the secret here is to not use the butter outside but inside in the filling itself. So just like this I will be revealing some tips and tricks to make that perfect momo or a dumpling for you to enjoy with your family and gain lots andd lots of appreciation.

INGREDIENTS

  • Vegetables (All of your choices) — I took some Cabbage (1/3), Carrots (1, small-sized), Spring onions(your preference), Caramalized onions (2, medium-sized).
  • All-Purpose Flour (1 and 1/2 Cup, more for dusting)
  • Butter (2 Tablespoons)
  • Garlic (4–5 cloves, chopped very fine)
  • Oil (1 Tablespoon)
  • Salt (As per taste)
  • Soy Sauce (1 Teaspoon)
  • Red chilli sauce (2 Teaspoon)
  • Green chilli sauce (1 Teaspoon)
  • Pepper (Optional)
  • Red chilli flakes or powder (1 Teaspoon)
  • Oregano (2 teaspoons)

ASSEMBLY

Add the flour and a little bit of salt, mix it. Now add water to it, slowly and knead a stiff and hard dough. Cover it with a light damp cloth while we work on the filling now.

In a pan, add oil, add the garlic and fry until golden brown. Now to it add all the sauces and spices, then to it add the vegetables, now add the oregano and salt. Do not add the butter now.

Now let the filling steam for about 5–7 minutes, and after it is done let the filling cool down on room temperature while we now roll the dough. When the fillings is cooled enough, now add the butter and mix it, but make sure the filling is colled and not hot otherwise the butter will melt leading to the sogginess of the filling.

Divide the dough into lemon-sized balls and roll into very thin circles. Dust the surface ith flour if needed. Now place the filling in the center of each circle and dab the edges of the circle with water.

Fold the edges of the circle and make designs as you like, I think it is your food so you’re the designer & the creator of it.

Take a pan, add oil or just brush some oil on it, place the momos on it. Now place the lid and let it cook for 2 minutes or till the bottom of the momos is golden or light brown. Now in the same pan add 100 ml of water, place the lid and let teh momos steam now for around 7 minutes.

Now finally, the sauce or chutney I loved it. The recipe is quite simple. To make this take 2 tablespoons of soy sauce, add 1/2 teaspoon of vinegar and mix it. The twist is adding 1 tablespoon of chilli oil in it. And trust me you will love this recipe. it is absolutely delicious and pairs well with momos or dumplings.
