CLASSIC PYAAZ KI BHAJIYAA

This dish ONION BHAJIYA or PYAAZ KI BHAJIYA is tradition, it has been made in India from around 100 or 1000’s of years and the dish has taken many twist and turns of of filling cheese in it or adding a little extra spice or even adding several other vegetables into it. But, today I will be giving you my original recipe and for most of you who are older to me and knows the dish very well then I’d be most grateful if you correct me in the comments section below. Then, without any further delay, Lets start!!
Yes, in this recipe we will directly jump into the assemblage. If you want to know about the ingredients and the measurements then have a look at the bottom of the page.
- Take some onions, cut them evenly and thin. Add to it some green chillies finely chopped and then some coriander also finely chopped.
- Add Ajwain (Carrom seeds), Hing (Asafoetida), Haldi(Turmeric), Salt as needed.
- Mix everything well and keep the mixture aside for about half an hour.
- Once the onions release the moisture, add Besan(Gram Flour). I usually do not prefer to add baking soda, but if you do then go ahead but be careful, it should not be more than a pinch.
- The whole mixture once gathered after adding the besan is ready to be fried.
- In a pan, add oil, let it heat and then add small ball-sized batter of the fritters or pakoras.
- Fry them, until it is golden brown from both the sides. Remove the pakoras or fritters and then keep them on a paper towel to remove excess oil from it.
- Now serve the onion fritters or Kanda Bhajiya or Pyaaz ki bhajiya with green chutney and some meethi chutney.
WHAT DO WE NEED
- Onions (2, medium-sized)
- Besan or Gram Flour (1 Cup)
- Green chilly (1, finely chopped)
- Hing or Asafoetida(a pinch)
- Coriander or Dhania (finely chopped)
- Turmeric Haldi(1/4 teaspoon)
- Ajwain or Carrom seeds (1/4 teaspoon)
- Salt( As needed)
- Oil (for frying)
